I had some potatoes that I needed to use up today so I thought
I would whip ~ up a yummy batch of my Potato Soup.
Here's my recipe...
Add ~ 32oz. of chicken broth
2 chopped garlic cloves
3 bay leaves
1 t. celery salt
1 t. salt (more if like it saltier)
1 t. pepper
1/2 t. lemon pepper
1/8 cup chopped chives
4 cooked/crumbled slices of bacon
Add ~ 9 cups of cubed raw potatoes, boil on med/hi flame untill tenderThen remove the pot from the burner and mash the potatoes with a potato masher to your liking.
Smooth to chunky it's up to you!
Add ~ 1 pint half & half2 cups grated sharp cheddar cheese
1/8 cup crumbled gorgonzola cheese
Continue cooking on low until cheese is melted. Let it cool slightly before serving.
It is even tastier if you refrigerate it over night and serve it the next day after the flavors have blended.
